Cooking Recipe : Chilli Bean Beef Stew and Soy

Ingredients

  • 2 garlic cloves, crushed
  • 2 inch piece fresh root ginger, peeled and sliced
  • 1 red chilli, de-seeded and chopped
  • 1 onion, sliced
  • 2 medium carrots, cut into 2 centimetre thick slices
  • 1 kilogram braising beef, cut into large chunks
  • 1 litre vegetable stock
  • 2 tablespoons chilli bean paste
  • 1 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 2 teaspoons brown sugar
  • 1 spring onion, sliced
  • 1 small handful fresh coriander, sliced
  • Steamed buns to serve

Method

Put all the ingredients, except the spring onion and coriander into a large pan and bring to the boil. Turn the heat down to low, cover the pan and simmer for 2 hours. Garnish with the spring onion and coriander and serve with steamed buns.
