Cooking Recipe : Chilli Bean Beef Stew and Soy

- 2 garlic cloves, crushed
- 2 inch piece fresh root ginger, peeled and sliced
- 1 red chilli, de-seeded and chopped
- 1 onion, sliced
- 2 medium carrots, cut into 2 centimetre thick slices
- 1 kilogram braising beef, cut into large chunks
- 1 litre vegetable stock
- 2 tablespoons chilli bean paste
- 1 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 2 teaspoons brown sugar
- 1 spring onion, sliced
- 1 small handful fresh coriander, sliced
- Steamed buns to serve
Method
Put all the ingredients, except the spring onion and coriander into a large pan and bring to the boil. Turn the heat down to low, cover the pan and simmer for 2 hours. Garnish with the spring onion and coriander and serve with steamed buns.
