Emperor's Fried Sea Bass

Ingredients
  • 1 fillet of sea bass, rubbed with salt
  • 2 tablespoons / 1 oz corn flour
  • 1 egg
  • 125 millilitres / 4 fl oz vegetable oil for frying
  • 3 cloves garlic, diced
  • 2 ounces fine sugar
  • 4 ounces california golden raisins, finely diced
  • 2 tablespoons / 1 fl oz fish sauce
  • 2 tablespoons / 1 fl oz plum sauce
  • 2 ounces peanuts, pounded
  • 1 sprig of coriander
  • 2 sweet oranges, squeezed
  • Spring onions and lettuce for garnish
  • 1 cheek of mango, cut into cubes
  • 3 tablespoons / 1½ fl oz tomato ketchup

Method
  1. Fry the fish, which has been rubbed with salt, corn flour and egg, till crispy. Set aside.
  2. In a pot, add California golden raisins and other ingredients for the sauce. Let it boil.
  3. Add vinegar, salt and sugar to taste. Adding corn flour can thicken the sauce.
  4. Pour over the fish and serve.
