Emperor's Fried Sea Bass

- 1 fillet of sea bass, rubbed with salt
- 2 tablespoons / 1 oz corn flour
- 1 egg
- 125 millilitres / 4 fl oz vegetable oil for frying
- 3 cloves garlic, diced
- 2 ounces fine sugar
- 4 ounces california golden raisins, finely diced
- 2 tablespoons / 1 fl oz fish sauce
- 2 tablespoons / 1 fl oz plum sauce
- 2 ounces peanuts, pounded
- 1 sprig of coriander
- 2 sweet oranges, squeezed
- Spring onions and lettuce for garnish
- 1 cheek of mango, cut into cubes
- 3 tablespoons / 1½ fl oz tomato ketchup
Method
- Fry the fish, which has been rubbed with salt, corn flour and egg, till crispy. Set aside.
- In a pot, add California golden raisins and other ingredients for the sauce. Let it boil.
- Add vinegar, salt and sugar to taste. Adding corn flour can thicken the sauce.
- Pour over the fish and serve.
