Fried Fish with Sweet Chilli Sauce

300g Firm white fish, or sea bass fillet, cut ½ inch thick
2 tbsp Lime juice
½ tsp Salt
2 tbsp All purpose flour
1 cup Oil for frying
1 Green or red chilli, deseeded and finely julienned
¼ cup Fresh coriander
Sweet Chilli Sauce
5 Red chilli, deseeded, coarsely chopped
3 tbsp Garlic sliced
3 tbsp Fish sauce
3 tbsp Vinegar
3 tbsp Sugar
3-4 tbsp Water
1 ½ tbsp Coarsely chopped garlic
2 tbsp Oil
INSTRUCTIONS
Method for making the sauce
1. Pound red chilli and garlic finely. Heat oil in a wok over medium heat, stir fry chopped garlic only until fragrant, adding the paste, fish sauce, sugar and vinegar, stir well over low heat.
2. Add water and simmer until the sauce thickens.
Method
1. Coat the fish with lime juice and salt
2. Coat the fish with flour thinly and fry in heated oil over medium heat until brown both sides. Set aside over absorbent paper
3. Place the sweet chilli sauce in a wok, over medium low heat. Combine the fish and gently stir well until the sauce coats the fish.
Remove from heat. Transfer to a serving plate, garnish with chilli and coriander.
4. Your Fried fish with sweet chilli sauce is ready to eat!
